Now we're off to the main course. This ridiculously easy dish can be prepped ahead of time or on the spot in less than 15 minutes, so you can get back to chatting up your hot neighbor...

Chicken Maize with chipotle tartar sauce.
Ranch 616's Chicken Maize
1 8 oz. chicken breast
1 cup shredded tortilla strips
2 cloves finely minced garlic
1 finely minced jalapeno
1 oz. chopped cilantro
Salt & pepper to taste
Olive oil
Press an 8 oz. chicken breast into the tortilla chips on both sides. Heat a sauté pan with olive oil until hot. Add the tortilla-crusted chicken to the hot pan, then add finely minced garlic and jalapeno to sauté the pan. Turn chicken in four minutes when tortillas have browned. Add the cilantro on top. Put the sauté pan in a 350-degree oven for 12 minutes until chicken is fully cooked. Salt & pepper to taste.
Optional: Top with your favorite sauce.
